The great Classic Method of the Santa Maria La Palma Winery. The Novecento59 is a classic method sparkling wine made from Chardonnay grapes. The grapes are harvested after August in a small group of specific vineyards in the Alghero DOC region. The selection of the bunches is very accurate since the Novecento59 requires great olfactory cleansing. Floral scent, with the characteristic hint of bread crust, embellished with a fine and persistent perlage. A unique wine, which celebrates the people who made this winery great, to be chosen for great toasts.

Average age of vines: 20 years
Vinification and aging: the grapes are pressed very softly and the first fermentation takes place at a temperature of 13 degrees. After the primary fermentation, the wine is ready for a second fermentation inside the bottle. The yeasts are prepared and according to the classic method a second fermentation is started where the wine remains in contact with the yeasts in a bottle closed with a crown cap, at a controlled temperature. Each bottle becomes a unique element in which the perlage is formed and the aromas change. After 12 months of contact between yeasts and wine, disgorgement takes place. Now the Novecento59 is ready for 4-6 months of bottle aging.
Color: Pale yellow with greenish hues
Aroma: Very floral with a nice fruity white pulp peach and hints of bread crust.
Taste: Fresh, with a slight salty note and a clean but full finish. Fine and resistant perlage
Pairings: Excellent as an aperitif, ideal for all dishes based on fish, crustaceans, molluscs, and delicate land dishes.
